Publisher

(1) Publishing house. (2) The person who defines/shapes a specific list. This can be the head of the editorial department or the owner of a small private press.

Publishers have their origins in printing and the Gutenberg revolution. The rise (and declining fortunes) of the publisher is described here in some detail.
